Say hello to yet another viral TikTok recipe — Pesto Eggs.

There's a new TikTok approved way to cook eggs for breakfast and I am eggcited to share it with you all. If you love pizza and you love eggs, you definitely have to try the Pesto Eggs. Apparently America’s ass, I mean Chris Evans is a big fan too!

The idea is to substitute the regular oil with a few spoonful of basil pesto in a frying pan, then crack eggs directly into the oily, pine-nutty goodness and make a sunny-side-up. Then you take a piece of buttered toast, place your favorite cheese, top it off with pesto eggs and garnish with some salt, pepper and red chili flakes.

  • Basil Pesto - 2-3 tbsp

  • Egg - 1-2

In a small skillet or frying pan over low heat, add a couple of tablespoons of pesto. Spread it around and let the oil heat up. It's important to keep the heat on low since extra virgin olive oil, the oil that is typically in pesto, has a low smoke point. That way, you don't burn the pesto. Also this goes without saying but if you can make homemade fresh pesto instead of store bought, it totally elevates the recipe. But I will not ding you for using jarred pesto because I totally use them as well!

When the oil is hot and the pesto is starting to release the oil, crack an egg or two into the pesto. Let the eggs cook slowly until it’s at your desired doneness. Do not increase the heat. If you are not a fan of sunny-side-up, feel free to gently flip the eggs over and cook the other side to make over-easy eggs instead.

  • Sourdough or Focaccia - 1-2 slices

  • Butter

  • Mozzarella

While the eggs are cooking, butter your choice of bread slices. Butter is optional and if you are more health conscious, go ahead and skip the butter. But I will tell you from personal experience, buttering the toast ahead makes a huge difference. The butter melts all the way through, soaking into the bread, which creates a toast that's richer throughout—literally top to bottom. The bread is crispier because there's a frying action happening and you end up with toast that is crispy on the outside, and soft and fluffy on the inside.

Okay enough with the butter debacle. Place couple slices of mozzarella on top and toast the bread slices and bake/toast in a toaster oven or a regular convection oven at 450°F for 4-5 minutes. The original recipe uses ricotta cheese but I am not the biggest fan of ricotta and I had a lot of mozzarella in my fridge so I decided to use them instead. Feel free to use up whatever cheese of your preference - it does not have to be mozzarella or ricotta.

  • Salt, Pepper & Red Chili Flakes

Once the eggs are cooked to your desired doneness, remove from the pan and add to the sourdough with melted cheese. It’s going to be one egg for one bread slice. Season with salt, pepper and red chilli flakes.

Few other ingredients that are totally optional but goes great with the pesto eggs - roasted cherry tomatoes (like I have), mashed avocado and hot honey. Be creative and if you find any other combination of ingredients that go with pesto eggs, let us know. We would love to try them out!
